Beluga Caviar Beluga caviar is harvested from the Huso huso sturgeon, the largest and rarest species of sturgeon native to the Caspian Sea. This elegant fish can reach up to 3 meters in length and weigh over 200 kilograms and require a significant maturation period, typically taking 10 to 12 years to produce caviar. Known for its smooth, elongated body and powerful presence, the Beluga sturgeon produces the largest caviar pearls, measuring between 3.2 to 3.5 millimeters in diameter. The pearls display a refined color palette ranging from dark gray to a lustrous silver-gray, with the lighter hues considered the most valuable. The flavor profile is rich, buttery, and slightly nutty, offering a taste experience that is both luxurious and unforgettable.
