Sterlet Caviar Sterlet caviar is derived from the Acipenser ruthenus, the smallest of the caviar-producing sturgeons. Native to the Kura, Volga and Ural rivers flowing into the Caspian Sea, the sterlet typically grows to 50-70 centimeters in length and weighs up to 7 kilograms. Sterlet sturgeons reach maturity relatively quickly, often producing caviar within 3 to 5 years. The caviar pearls are the smallest in size, ranging from 1.4 to 1.7 millimeters in diameter. They display a subtle color spectrum, often in shades of dark gray to black. Sterlet caviar is known for its distinct, slightly briny flavor that develops into a nutty and mildly sweet aftertaste. Its refined profile and lingering finish make it a sophisticated and lighter option among caviars.
