The limited contact between the blade and the flesh prevents any fat emulsion on the surface, which often spoils the presentation. This quality is obtained with various smoked fish fillets: farmed salmon, wild salmon, trout, halibut, tuna, cod … For each slice, the precise control of the thickness and the slicing angle allows optimum use of the fish fillet. A very simple procedure, performed on the touch-screen, guides the operator step –by-step so that they can create slicing programs suited to the raw material and the production specifications. The programs are stored in a library. Once the program has been selected, each fillet is sliced according to the real weight communicated by the scale connected to the slicer. The design and manufacturing quality of the TN 200 V364 slicer allows it to reach real production speeds of 220 cycles/min. (When it is connected to a DDV module, the speed must be reduced to 200 cycles/min. due to the capacity of the weighing system). It can slice left or right fillets equally. More than 50 TN 200 slicers are currently in service in multiple countries and in many of the best-known smoked salmon processing plants in France, Spain, Scotland, Belgium, Poland, Switzerland and Canada. The first TN 200 produced (V355 in the initial version) is still operating and has been since 2001! In France, the TN 200 slicer represents more than 75% of the industrial smoked salmon capacity. with the DDV 400 batching module, the consumer sales units production is automated (fixed/variable weight and number of slices).
