Rapana venosa — the veined rapa whelk, known also as top shell or rock shell — is one of the Black Sea's most prized shellfish. Hand-harvested by divers and professional trawlers, then cooked and individually frozen to lock in its naturally sweet, firm flavour. Supplied whole muscle or sliced, ready for seafood cocktails, sushi, pasta, and gourmet preparations. Popular for canning as scungilli or bai top shell.
